原料:猪蹄750克。 ­

调料:盐、葱各13克,姜8克,香油、料酒各25克,花椒5粒,冰糖50克,汤1300克。 ­

制作: ­
(1) 将猪蹄刮毛洗净,剁去爪尖劈成两半,用水煮透后放入凉水中。姜、葱拍破待用。 ­
(2) 用炒勺将少许香油烧热,放入冰糖炸成紫戏色时放汤调至浅红色为度。 ­
(3) 加入猪蹄、料酒、葱、姜、盐、花椒,汤烧开后除去浮沫,用大火烧至猪蹄上色后,移至小火炖烂, 收浓汁即成。 ­

四、猪蹄瓜菇汤­

药材:红枣30克、黄耆、枸杞子各12克,当归5克 ­

原料:猪前蹄1只、丝瓜300克、豆腐250克、香菇30克、姜5片、盐少许 ­

制作: ­
1.香菇洗净泡软去蒂,丝瓜去皮洗净切块,豆腐切块备用。 ­
2.猪前蹄去毛洗净剁块,入开水中煮10分钟,捞起用水冲净,黄耆、当归放入过滤袋中备用。 ­
3.锅内入药材、猪蹄、香菇、姜片及水10杯,以大火煮开后,改小火煮至肉熟烂(约1 小时),再入丝瓜、豆腐续者5分钟,最后参加盐调味即可。 ­

功效:养血、通络、下乳、实用于产后体质衰弱、乳汁不足者。 ­

五、大蹄扒海参­
­
­
­
主料:水发海参750克,猪蹄2个。 ­
­
调料:动物油800克(实耗约50克,熟大油100克,姜块、酱油各15克,料酒25克,葱姜油、盐各20 克,白糖50克,味精5克,葱段25克,糖色少许,湿淀粉适量,鸡汤1.5公斤。 ­
­
制作: ­
(1) 猪蹄刮洗清洁,在外侧划上一刀,用开水煮透,捞出控去水分后放入烧有7成热的植物油炒勺中,炸至金黄色,捞 出沥油。海参洗净后用直刀一世两半待用。 ­
(2)炒勺将大油烧热煽炒葱、姜拍松,并烹入料酒跟酱油加入味精、鸡汤和盐、糖色。 把势放入炒勺内,再放上猪蹄,烧开1小时将猪蹄翻转过来,再用小火将猪蹄煨烂,放 入盘中。将葱、姜拣出,掏出垫,将海参放入勺中3分钟,用湿淀粉勾芡,淋入葱姜油即成。 ­

六 、卤水猪蹄­
­

八、红烧猪蹄­

主料:猪蹄 ­

猪手一只,老醋一小支,老姜一块,辣椒干,酱油,蒜米一整粒,糖(冰糖更好) ­

1。猪手去毛,砍块,下水煮去血水,洗净。 ­

2。姜切大块拍扁,和猪手块一起下锅炒(免油),开端泛油的时候加蒜米(整粒),3-4条辣椒干,少许酱油,和半支醋煮滚。 ­

3。加水没过所有资料,煮至猪蹄腐烂,加糖,试味,不够酸加醋。 ­

十二、香辣美容蹄­
­

­
主料:生猪蹄750克配料:花椒、干红辣椒、葱、姜、蒜、芝麻、料酒、盐、味精、冰糖、大料、桂皮、香叶等 。 ­

制作过程: ­
第一步,先将生猪蹄在火上烧一下,去毛,然后切成块状放入油锅炸至表皮微焦。 ­
­
第二步,将炸至微焦的猪蹄放入热水中焯一下,去掉焦糊味。 ­
­
第三步,把冰糖放入锅中炒成焦糖色,备用。 ­
­
第四步,把大料、香叶、桂皮、葱、姜、蒜放入锅中一起炒,制出香味,而后放入料酒,加水,把焯好的猪蹄放入 水中煮制,大概1个小时。在这个进程中,加入盐和味精,还要把制成的焦糖色一直地加入水中,使 猪蹄上色。 ­

第五步,把煮熟的猪蹄捞出,装盘。再把花椒和干红辣椒用少许油煸至辣椒微黄,出锅淋在猪蹄上,再在其上撒上 一些芝麻。 ­
