春天大地苏醒,万物萌发,人们精神焕发,情绪高昂。中医传统学说谓人体脏腑春天以肝应时,故春天进补当以养 肝为主。肝主疏泄调达,春得疏泄则肝气调和,身心健旺。现兹介绍几种春季进补的汤羹。八鲜大补汤原料:人参 3g,干贝、火腿各20g,冬笋50g,水发海参、猪肉、鸡肉各100g,海米15g,葱、姜、精盐、味精 、料酒、猪油各适量。制法:将人参用温水湿润切成薄片,干贝、海米用温水浸泡,火腿、冬笋切片、鸡肉、猪肉 切成小块,海参切小丁控去水分备用。先将猪肉入锅,投入葱、姜、料酒烹炒,加水适量,再入精盐、干贝、海米 、火腿、冬笋、猪肉、鸡肉,武火煮开后,用文火炖至肉烂,再加入海参丁、人参片焖片刻,调味即成。佐餐食用 。功效:养肝益脾,培补元气,适宜于精力不旺,身体虚弱者。首乌鲤鱼汤原料:鲤鱼1尾(约500g),何首 乌10g,调料适量。制法:将鲤鱼除去内脏洗净切成小块,何首乌水煎取药汁备用。将锅内加水适量,放入少许 盐,烧开后放入鱼块,待鱼熟时,倒入何首乌汁,煮开后即离火盛到碗内,加入花椒粉、胡椒粉等调料即成。功效 :强精,补肝肾。适用于肝肾不足、须发早白、未老先衰、失眠多梦等症。黄芪鳝鱼汤原料:鳝鱼(黄鳝)450 g,黄芪30g,生姜3片,香油、盐、味精适量。制法:将鲜活鳝鱼宰杀,刮去骨和内脏,洗净切丝 ,加湿器价格,黄芪切片,用纱布包好。将鳝鱼丝,黄芪药包和姜共放入沙锅内,加水适量煮熟起锅前弃药包,加入盐、味精、 调味即可。吃肉喝汤。功效:补血生血,盟特新产品,祛湿通络。适用于因气血虚弱所致的少气懒言,头晕眼花,体倦乏力等症。猪肉杞子汤原料:新鲜瘦猪肉200 g,枸杞子30g,香油少许,精盐适量。制法:将猪肉切片,枸杞子洗净备用。将枸杞子、猪肉片及精盐少许, 烧熟20分钟使肉熟烂后,加入适量香油即可。佐主食进餐。功效:滋补肝肾,益气和中。适宜于肝肾阴虚、脾胃 虚弱所致的头晕耳鸣,视物昏花,双目干涩,腰腿酸痛,气短乏力等病症的食疗。胡萝卜猪肝汤原料:新鲜胡萝卜 200g,新鲜猪肝100g,生姜片、精盐、香油、香菜各适量。制法:将猪肝,胡萝卜洗净,切片备用。锅内 加大烧开,先放少许生姜片与精盐,再放胡萝卜片,煮5分钟,然后放入猪肝片,待猪肝煮熟时,加入香油和香菜 末少许即可。配主食进餐。功效:养肝、补血、明目,光波炉菜谱。适宜于肝血不足所致之头目昏花、夜盲症及各种贫血等症的食疗调补之用。兰花鸭肝羹原料:兰花15朵,鲜鸭 肝400g,清汤1000ml,鸡蛋1个,调料适量。制法:将葱、姜洗净,切片,泡入清汤内,鲜鸭肝洗净, 用刀背砸成细茸置碗内,入精盐、味精、料酒、白胡椒面、蛋清、湿淀粉各适量拌匀,上笼武火蒸熟,随之在炒锅 内注入清汤烧沸,再略加精盐、味精、料酒、白胡椒面,淋入香油,撒上兰花,加湿器批发价格,轻轻注入鸭羹即成。随意服食。功效:养肝补血。适用于肝虚目暗及血虚头晕,面色不华等症。老人食用更为有 益。荤素相宜羹原料:羊肉2500g,草果5个,豌豆500g。山药、糟姜、乳饼、胡萝卜、蘑菇、生姜、鸡 蛋、芝麻泥各适量。制法:先将羊肉洗净切快,豌豆捣碎去皮;再将二者与草果共煮取汤,而后入山药、糟姜、乳 饼、胡萝卜、蘑菇、生姜、芝麻泥,羹成后加葱、姜、醋调味。食肉,饮汤。功效:补中益气。适用于脾胃虚弱, 四肢无力,食少便溏等症。
