Thumbs up Stuffed Red Peppers - Vegetarian Style

Good morning everyone and how are you all today? Is the sun shining where you are? With both my children now off school for the summer holidays <a href="http://www.hatslids.com/prodtl-f-MLB-Fitted-Hats-f2-43.html"><strong>New Era 59FIFTY Fitted Hats</strong></a> I have just looked at the forecast for the beach for next week and it is not great, but. . . it is getting better. Hopefully the sun will shine for all of us, wouldn’t that be lovely. So what have you been up to? I have quite a few gardening projects to finish – if only the weather, sigh! Ayway I thought I would cheer up a meal time with a colourful dish of Stuffed Red Peppers, and since I am vegetarian that is how I made them. I used fresh basil leaves in this recipe, the smell is amazing, enjoy the smell let it flood your kitchen and be reminded of long hot summer days, yep I am there! So . .Â* for Stuffed Red PeppersÂ* – Vegetarian Style you will neeed – I will give you a recipe for 4 peppers. 4 large Red Peppers 1 Onion, chopped 1 clove garlic Rice cooked (I used approximately 3/4 of a mug) 1 Handful Broad Beans, cooked 2 Tomatoes Fresh basil leaves Pecorino Cheese Chop your peppers in half, take out the seeds and lightly roast in olive oil for 10mins in a Â*warm oven 180 – 200 deg C Fry your finely chopped onions and garlic until softened Now add the onions and garlic, broad beans and the basil leaves togther with the rice Place a spoonful or two in each of half of the peppers, place a lice of fresh tomtoe on top and sprinkle liberally with the cheese Place back in the oven for another 10 mins until the cheese has turnedÂ* golden Serve and enjoy You <a href="http://www.hatslids.com/prodtl-f-New-Era-Caps-f2-58.html"><strong>new era caps</strong></a> can use this recipe as the base for many things – if you like meat you could add some Chorizo or some bacon, you could use Mozarrella or Parmesan instead of Peorino , if you like a bit of bite try roasting your peppers with some Chilli Oil. I served mine with a little of the rice and kohlrabi.Tto prepare the kohlrabi I peeled it, steamed it for approx 2mins, sliced it and then roasted it for 10 – 15 minutesÂ*I would reccommend this vegetable. This i the first time we have grown them and we will be doing so again. Isn’t lovely when you find something new – love it.Â*Â* Stuffed Red Peppers are great to make if you are planning a BBQ even if you are not a vegetarian you can still <a href="http://www.hatslids.com/prodtl-f-NBA-Jerseys-f2-74.html"><strong>Wholesale jerseys</strong></a> enjoy them as a side dish. I was hoping to do a BBQ this weekend I geuss from the weather it is wait and see – what are your plans for the weekend? The children have a made a list of all the things they want to do this summer during their holidays – so we shall try to work our way through it – clearly they dont completely trust me to come up with activities on my own!
